This is one of my favourite recipes and easy and feel good, I have tried this with a variety of different flours to make it gluten-free. The below will make 4 portions. Thanks go to Suzanne Y for sharing this family recipe many years ago.
16 oz grated courgettes (approx 250 gr or 3 medium size courgettes)
1 medium chopped onion
1 cup (around 100-125 gr grated cheese (works with Cheddar as well as with Gruyere, and also with 200 gr )
half cup (approx 125 ml) oil (veggie, or rapeseed or olive)
3 beaten eggs
1 cup (approx 125 gr) self-raising flour (wheat) - if using spelt or rise flour, add a spoon of baking powder to create the same effect)
salt and pepper

Mix everything together and put in a preheated oven at 200°C for approximately 40 minutes.
